Cherry Pie Recipe with Homemade Pie Crust using the Salton WizNMix

Homemade Pie Crust

Ingredients:
2 1/2 cups all-purpose flour
1 cup (2 sticks) unsalted butter, cold and cut into small cubes
1 tsp salt
1 tsp sugar
6-8 tbsp ice water

Instructions:

Prepare the Dough:
- In the Salton WizNMix, combine the flour, salt, and sugar. Pulse to mix.
- Add the cold butter cubes to the flour mixture. Pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, pulsing until the dough starts to come together. Avoid adding too much water.

Form the Dough:
- Turn the dough onto a lightly floured surface. Divide it in half and shape each half into a disc.
- Wrap each disc in plastic wrap and refrigerate for at least 1 hour.

Roll the Dough:
- On a lightly floured surface, roll out one of the dough discs to fit a 9-inch pie pan. Ensure the dough is about 1/8 inch thick.
- Carefully transfer the rolled dough to the pie pan, pressing it gently to fit. Trim any excess dough hanging over the edges.
- Roll out the second disc of dough for the top crust and set it aside.

Cherry Pie Filling

Ingredients:
4 cups fresh or frozen cherries, pitted
1 cup granulated sugar
1/4 cup cornstarch
1 tbsp lemon juice
1 tsp vanilla extract
1/4 tsp almond extract (optional)
1 tbsp butter, cut into small pieces

Instructions:

Prepare the Filling:
- In a large mixing bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract (if using). Mix well until the cherries are evenly coated.

Fill the Pie:
- Pour the cherry mixture into the prepared pie crust in the pie pan.
- Dot the filling with small pieces of butter.

Top the Pie:
- Carefully place the second rolled-out dough over the cherry filling.
- Trim any excess dough and crimp the edges to seal the pie. Cut a few small slits in the top crust to allow steam to escape.

Baking the Pie

Instructions:

Preheat Oven:
- Preheat your oven to 375°F (190°C)

Bake the Pie:
- Place the pie on a baking sheet to catch any drips. Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.

Cool and Serve:
- Allow the pie to cool on a wire rack for at least 2 hours before serving to let the filling set.
