Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Lemon Filling:
- 1 1/4 cups granulated sugar
- 1/4 cup cornstarch
- 1 1/2 cups water
- 4 large egg yolks, lightly beaten
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- 1 tablespoon lemon zest
- 2 tablespoons unsalted butter
For the Meringue:
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
Instructions:
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well-coated.
- Press the mixture into the bottom and up the sides of a 9-inch pie dish.
- Bake for 8-10 minutes, until golden brown. Let it cool completely.
2. Make the Lemon Filling:
- In a medium saucepan, whisk together sugar and cornstarch.
