Ingredients
For the Dough (Makes 1 x 12ā Pizza)
- 2 Ā¼ tsp (1 packet) active dry yeast
- Ā¾ cup warm water (110Ā°F)
- 2 cups bread flour (for extra crispness)
- 1 tsp salt
- 1 tbsp olive oil
For the Sauce
- Ā¾ cup crushed tomatoes
- 1 clove garlic, minced
- Ā½ tsp dried oregano
- Ā½ tsp dried basil
- Ā½ tsp salt
- Ā¼ tsp black pepper
- 1 tbsp olive oil
For the Toppings
- 1 Ā½ cups shredded low-moisture mozzarella cheese
- Ā½ cup pepperoni slices
- Ā¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tsp crushed red pepper flakes (optional)
- 1 tbsp cornmeal (for the pizza stone)
Instructions
Step 1: Prepare the Dough
- In a bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
- In a mixing bowl, combine bread flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
- Knead for 6-8 minutes until smooth and elastic. Cover and let it rest for 30-45 minutes (since high-heat pizza ovens perform best with shorter dough fermentation).
- Roll out the dough into a 12-inch circle on a floured surface.
Step 2: Prepare the Sauce
- Heat olive oil in a pan over medium heat. SautƩ the garlic until fragrant.
- Add crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 5 minutes and let it cool.
Step 3: Preheat the Pizzadesso
- Insert the cast iron pizza stone into the oven.
- Set the Pizzadesso to 800Ā°F and select the āRegular Pizzaā mode.
- Let the oven preheat for at least 15 minutes for optimal crisping.
Step 4: Assemble the Pizza
- Sprinkle cornmeal on a pizza peel or parchment paper.
- Place the rolled-out dough on top and spread a thin layer of sauce.

- Add pepperoni slices and sprinkle Parmesan cheese.
- Finish with Italian seasoning and crushed red pepper flakes (optional).
