Ingredients:

Rice:
1 cup sushi rice (use the White/Sushi Rice setting in the Salton Rice Cooker)
1 ½ cups water
1 tbsp rice vinegar
1 tsp sugar
Pinch of salt

Poke:
200g sushi-grade ahi tuna (cubed)
1 tbsp soy sauce
1 tsp sesame oil
½ tsp rice vinegar
½ tsp sriracha
1 tsp sesame seeds
1 green onion, thinly sliced

Toppings:
½ avocado, sliced
1 small cucumber, thinly sliced
Edamame (steamed)
Pickled ginger
Seaweed salad
Radish slices
Shredded carrots

Instructions:

Cook the rice: Rinse the sushi rice thoroughly until the water runs clear. Add the rinsed rice and water to the Salton Rice Cooker. Use the White/Sushi Rice setting and let the rice cook. Once done, let it cool slightly. Mix in rice vinegar, sugar, and salt for perfectly seasoned sushi rice.

Prepare the poke: In a bowl, combine the cubed ahi tuna, soy sauce, sesame oil, rice vinegar, sriracha, and sesame seeds. Toss gently until evenly coated. Let it marinate while the rice finishes cooking.
