Back to School Special: Quick Veggie Rice Bowl!

Kickstart your school year with this delicious and nutritious Quick Veggie Rice Bowl! Packed with vibrant veggies, hearty chickpeas, and flavorful falafel, this dish is perfect for busy days and meal preps. 😍✨


Ingredients: 

For the Rice:
2 cups jasmine rice
4 cups water
1 tsp salt

For the Veggie Mix:
1 cup chickpeas, drained and rinsed
1 cup diced bell peppers
1 cup chopped kale
1 cup pre-cooked falafel (store-bought or leftover homemade)
1 cup roasted or cooked potatoes (store-bought or leftover homemade)
1 tbsp olive oil
Salt and pepper to taste

Instructions:

1. Cook the Rice:
- Rinse the jasmine rice under cold water until the water runs clear.
- Place the rinsed rice, water, and salt into the Salton Automatic 6-Cup Rice Cooker.

- Turn on the rice cooker and let it cook until the rice is done. Keep the rice warm until ready to serve.

2. Prepare the Veggie Mix:
- In a large bowl, combine the chickpeas, diced bell peppers, chopped kale, pre-cooked falafel, and roasted potatoes.
- Drizzle with olive oil and season with salt and pepper. Toss to combine.

3. Assemble the Bowls:
- In meal prep containers or bowls, divide the cooked rice.
- Top the rice with the veggie mix.
